Organising a golf day

Two long serving memebrs of staff are leaving our company, and would like a golf day organised, there has been a sugestion that we should play in pairs a team of a regular golfer and a non golfer.

Has any one organised one of these before or have any ideas, 
;sugestions of formats and that.

Unless the course you are thinking of playing at has plenty of hire clubs the non - golfers may struggle to put a set together and probably most regular golfers won't be willing to share thier baby's.

Could do something similar to what Darlington Golf Club did - similar kind of event but the regular golfer played all shots to the green and the non golfers just made putts.
