playing on hills

Wondered this for a while, a few holes at crook when your on yours 2nd or 3rd shot the green is well below your feet. how should you play these shots. say for exaple my ball ends up on the 150yrd marker ( i hit my 6 iron 150 yrds). now say that the ball is lying on a nice flat lie but the green is 150 yrds away but say 30yrds below my feet. what club should i use?
How would u go about it?

I hit my 7 iron 150 yards so if I got into that situation I maybe hit a 9 iron and if it was uphill from 150 a 5 iron. All depends on the hill in question, the slope of the green and of course the wind
